If you record audio and then punch record over the top of part of the track, the second recording is another audio track on the hard disk right?
Yes. The new recording is placed in a new file.
Is there any situation when the original gets lost?
Not really. Only if you never save. If there are no references to any audio file and you have never saved then the audio file is automatically deleted.
Saving as a bundle perhaps or I guess combining obviously.
Saving as a bundle will place all the audio files into the resultant bundle file. All of the audio files regardless if 99% is used or 1% is used. If you save as a compressed bundle file then and only then the exposed portions of the audio files are written to the resultant file. Even in this case the original files still remain on your hard disk until you manually delete them.
So a tip to conserve audio space. Save as a compacted bundle file and then delete all the original audio files (assuming that no other Metro documents are referencing the original audio files).
When is non destructive, destructive apart from using off line effects that alter the original audio.
Even for off line effects, if you have saved the original document then the original audio file will never be deleted by Metro.
